This sausage and rice skillet is a one-pan dinner packed with flavor—smoky sausage, tender rice, and veggies in under an hour.


Ingredients

  • 1 tablespoon olive oil

  • 12 ounces smoked sausage, sliced

  • 1 small onion, diced

  • 1 bell pepper, diced

  • 2 cloves garlic, minced

  • 1 1/2 cups long-grain white rice, uncooked

  • 3 cups chicken broth

  • 1 (14.5-ounce) can diced tomatoes, undrained

  • 1 teaspoon paprika

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon black pepper

  • 1 cup frozen peas (optional)


Instructions

  1. Heat oil in a deep skillet over medium-high. Brown sausage 3 to 4 minutes.

  2. Add onion and bell pepper; cook 4 minutes. Add garlic 30 seconds.

  3. Stir in rice, broth, diced tomatoes, paprika, salt, and pepper. Bring to a boil.

  4. Reduce heat to low, cover, and simmer 18 to 20 minutes until rice is tender.

  5. Stir in peas (if using), cover 2 minutes, then serve.
