Description
This sausage and rice skillet is a one-pan dinner packed with flavor—smoky sausage, tender rice, and veggies in under an hour.
Ingredients
1 tablespoon olive oil
12 ounces smoked sausage, sliced
1 small onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 1/2 cups long-grain white rice, uncooked
3 cups chicken broth
1 (14.5-ounce) can diced tomatoes, undrained
1 teaspoon paprika
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 cup frozen peas (optional)
Instructions
Heat oil in a deep skillet over medium-high. Brown sausage 3 to 4 minutes.
Add onion and bell pepper; cook 4 minutes. Add garlic 30 seconds.
Stir in rice, broth, diced tomatoes, paprika, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer 18 to 20 minutes until rice is tender.
Stir in peas (if using), cover 2 minutes, then serve.
Notes
Swap: Use turkey sausage or kielbasa.
