Dough
- 3/4 cup whole milk, warmed to about 110°F
- 2 1/4 teaspoons active dry yeast
- 1/4 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 6 tablespoons unsalted butter, melted
- 1 tablespoon orange zest
- 3 cups all-purpose flour (plus more for dusting)
- 3/4 teaspoon fine salt
Filling
- 6 tablespoons unsalted butter, softened
- 1/2 cup packed light brown sugar
- 2 tablespoons orange zest
- 1 1/2 teaspoons ground cinnamon (optional)
Icing
- 4 ounces cream cheese, softened
- 2 tablespoons unsalted butter, softened
- 1 1/4 cups powdered sugar
- 2 tablespoons fresh orange juice
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Bloom yeast: Stir warm milk, yeast, and 1 teaspoon sugar. Rest 5–10 minutes until foamy.
- Mix dough: Whisk in remaining sugar, egg, yolk, melted butter, and orange zest. Add flour and salt; mix to a shaggy dough.
- Knead & rise: Knead 6–8 minutes until smooth. Place in greased bowl; cover and rise 60–90 minutes until doubled.
- Fill: Roll dough to a 14×10-inch rectangle. Spread softened butter. Mix brown sugar, zest, and cinnamon; sprinkle evenly.
- Roll & cut: Roll tightly from the long side. Cut into 9–12 rolls.
- Second rise: Place in greased 9×13-inch pan. Cover and rise 30–45 minutes.
- Bake: Heat oven to 350°F. Bake 20–25 minutes until lightly golden.
- Ice: Beat icing ingredients until smooth. Spread over warm (not hot) rolls.
Make-ahead option
- After shaping, cover and refrigerate overnight. Bring to room temperature 45–60 minutes, then bake.
