Ingredients

  • 1 1/2 pounds tilapia fillets
  • 3/4 teaspoon fine salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons all-purpose flour (optional)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1/3 cup chicken broth (or water)
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped parsley

Instructions

  1. Season tilapia; lightly flour if desired.
  2. Sear in olive oil 2–3 minutes per side; remove.
  3. Sauté garlic in butter 30 seconds.
  4. Simmer broth + lemon juice + zest 1–2 minutes.
  5. Return fish; spoon sauce over; garnish with parsley.

Notes

  • No broth: Use water and add an extra pinch of salt.
  • Tools: Large skillet, microplane for zest.
