Description

Lasagna soup has all the cozy flavors of lasagna in a one-pot bowl—meaty tomato broth, noodles, and cheesy topping.


Ingredients

Scale
  • 1 tablespoon olive oil

  • 1 pound ground Italian sausage (or ground beef)

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 2 tablespoons tomato paste

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon black pepper

  • 6 cups chicken broth

  • 1 (24-ounce) jar marinara sauce

  • 8 lasagna noodles, broken into pieces

  • 1 cup ricotta

  • 1 cup shredded mozzarella

  • 1/4 cup grated Parmesan

  • 2 tablespoons chopped basil or parsley


Instructions

  1. Heat oil in a pot. Brown sausage 6 minutes. Add onion 3 minutes; add garlic 30 seconds.

  2. Stir in tomato paste, seasoning, salt, and pepper for 1 minute.

  3. Add broth and marinara; bring to a simmer.

  4. Add broken noodles and cook 10 to 12 minutes until tender.

  5. Mix ricotta, mozzarella, and Parmesan.

  6. Serve soup with a dollop of cheese mixture and herbs.

Notes

  • Thicker soup: Simmer longer or add less broth.

  • Leftovers: Noodles soak up broth—add more broth when reheating.
