Description
Lasagna soup has all the cozy flavors of lasagna in a one-pot bowl—meaty tomato broth, noodles, and cheesy topping.
Ingredients
1 tablespoon olive oil
1 pound ground Italian sausage (or ground beef)
1 small onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 teaspoon Italian seasoning
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
6 cups chicken broth
1 (24-ounce) jar marinara sauce
8 lasagna noodles, broken into pieces
1 cup ricotta
1 cup shredded mozzarella
1/4 cup grated Parmesan
2 tablespoons chopped basil or parsley
Instructions
Heat oil in a pot. Brown sausage 6 minutes. Add onion 3 minutes; add garlic 30 seconds.
Stir in tomato paste, seasoning, salt, and pepper for 1 minute.
Add broth and marinara; bring to a simmer.
Add broken noodles and cook 10 to 12 minutes until tender.
Mix ricotta, mozzarella, and Parmesan.
Serve soup with a dollop of cheese mixture and herbs.
Notes
Thicker soup: Simmer longer or add less broth.
Leftovers: Noodles soak up broth—add more broth when reheating.
