This **baked feta pasta** is creamy and tangy with roasted tomatoes and feta. It’s simple, comforting, and perfect for any pasta night.
Ingredients
– 12 ounces pasta (penne, rigatoni, or spaghetti)
– 1 block (8 ounces) feta cheese
– 2 cups cherry tomatoes
– 1/4 cup olive oil
– 4 garlic cloves, minced
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– Fresh basil leaves, for garnish
Instructions
1. Preheat oven to 400°F (200°C).
2. In a baking dish, place feta in the center and arrange tomatoes around it. Drizzle with olive oil, and season with garlic, salt, and pepper.
3. Bake for 25–30 minutes until tomatoes burst and feta is golden.
4. Cook pasta according to package instructions, reserving 1/2 cup pasta water.
5. Mash feta and tomatoes together, mix with cooked pasta. Add reserved pasta water as needed for smooth sauce. Garnish with basil.
Notes
– Use block feta for the creamiest sauce.
– For extra flavor, add a sprinkle of chili flakes or parmesan.
